A tribute to your favorite skillet appetizer! Spinach Artichoke Chicken Bake combines one healthier shortcut with two cheeses that browns to a rich, creamy and flavorful meal your family will love.
I’m excited to share this recipe with you all. I’m slowly coming out of a bit of a dinner rut. Anyone else?
Not sure if it’s the change in seasons or just boredom with the same ol’ thing but I’ve literally felt clueless on what to make some days.
But let me tell ya– This dish really perked up the dinner hour last week!
It brought interest, indulgent flavor and a major dose of comfort. Not to mention the multiple “yums” and “thank you mommy” around the table.
And it’s so easy.
Why Spinach Artichoke?
Besides being a creamy, crowd-pleasing combination, spinach artichoke is a staple in our fridge. And no, I’m not draining, quartering artichoke hearts or squeezing water out from spinach each week.
I just open a carton.
We stock up on this spinach artichoke dip from Aldi USA. It’s:
- insanely affordable
- has impressive nutrition
- And makes my life easier
The whole family goes wild! In fact, you may have seen another variety featured on my recent Greek Gyro Instagram Reel.
Now, don’t stop reading if you don’t have an Aldi.
I encourage you to substitute with a similar dip. Or simply apply the following as a point of inspiration:

Ingredients
- Chicken Breast— use boneless, skinless chicken breast. I use chicken (and meat) from Good Ranchers. This “better than organic” chicken is simply out of this world! And delivered right to our door.
- Spinach Artichoke Tzatziki Dip— Yes, this is technically tzatziki dip and I LOVE that about it. Why? Well because if I was to make my own, I’d use a yogurt base just like this. So why make my own?! Find it at Aldi USA in refrigerated section. You can use a dip from your local grocery store or Pinterest search and make your own.
- Mozzarella Cheese— shredded; Italian blend is also delicious here
- Parmesan Cheese— the shaky green can is my go-to!
- Fresh Spinach leaves, optional– nice addition for additional color and nutrition. This is a great time to use my favorite spinach hack!
- Salt and Pepper— used to season chicken
Equipment
- Baking Dish
- Meat Tenderizer, optional
How do I make this easy spinach artichoke casserole?
Seeing that there is only a handful of ingredients, this comes together in no time. Follow these steps:
- Preheat oven to 400 degrees and spray baking dish with nonstick spray
- Tenderize chicken if needed (to ensure similar thickness)
- Lay chicken breasts down in single layer in baking dish and season with salt and pepper to taste
- Spread 2 TBSP of spinach dip onto each of the chicken breasts
- Lightly shake coating of parmesan cheese (approximately 1-2 tsp) over each chicken breast
- Sprinkle shredded cheese over the chicken breast. Garnish with spinach pieces, if desired.
- Bake for 30 minutes or until chicken is fully cooked (reaches 165 degrees using an instant-read thermometer)
Cut into this juicy, rich chicken and reminisce about that hot skillet of spinach artichoke dip at your favorite restaurant!
Tips and Tricks
For best results:
- Avoid cross contamination with raw chicken– I like to spoon the dip on all chicken pieces, close the dip container then go back and evenly spread it on each chicken breast.
- You can use other types of chicken– thighs, tenders, cutlets
- Bake time will vary slightly based on size/thickness of chicken breast
- Serve using a slotted spoon/spatula
- Variations: toss on some bacon bits, green onion/chives or even jalapenos!
How to serve
Removing the dish from the oven, you’ll notice liquid/juices in the dish. This is a good thing! The chicken will be moist, easy to eat. And ideal to serve with:
- Rice (and cauliflower rice!)
- Crusty bread
- Pasta (think spinach artichoke chicken pasta–yum!)
Other side dish ideas
- Salad (bagged is super simple!)
- Roasted Veggies (I’d recommend seasoning with salt and pepper to avoid competing flavors)
- Parmesan Air Fryer Cauliflower gnocchi
- Easy Corn Casserole
- Can of veggie or fruit
Can I make ahead of time?
Sometimes I will prep earlier in day so all I have to do is pop it in oven at dinner time.
To do this, follow recipe but instead of baking, cover and store in fridge.
When ready to bake, simply uncover, place on counter while oven warms and bake.
Can I reheat it?
You can reheat leftovers in microwave or oven though I do prefer microwave. My husband loves this for lunch!
Microwave slowly for about 2-3 minutes, or until warm. You may want to toss on a just little more cheese too š
Is this healthy?
Yes! This is definitely a healthy spinach artichoke chicken. We’ve got an excellent source of protein per serving, some veggies and deliciousness all in one place.
I love that this dip is in a lighter Greek yogurt base versus cream cheese or mayo that are used in traditional spin dip.
Other benefits include:
- easy to make (goodbye overwhelm!)
- Family enjoyment
- Very little clean up

Ingredients
- 4 chicken breasts boneless, skinless
- 1/2 cup Spinach Artichoke Dip I use Tzatziki dip from Aldi
- 2.5 tbsp Parmesan Cheese grated
- 3/4 cup mozzarella cheese shredded
- Fresh or Frozen Spinach to garnish, optional
