Two flavorful options. Two different meals. One recipe. Just head to your pantry and grab BBQ sauce and pesto and you’ll no longer wonder what to do with shredded chicken! Easiest meal prep solution!
Shredded Chicken
Even though you know how versatile my easy shredded chicken is, perhaps you need some extra encouragement to make a bowl full of chicken.
Or, let’s take something that is already a winner and make it even better with one small simple step. And by better, I mean stirring in more flavor, variety and having a meal ready to eat…instantly!
If you’re looking for an easy recipe, this is it. I’m not even sure you can actually call it a recipe. But hopefully this inspires you this week!
What Ingredients do I need?
- Easy Shredded Chicken, prepared
- Pesto (I like this one from Aldi)
- BBQ Sauce
How do I make?
- Divide prepared shredded chicken into two bowls (approximately 2 cups in each bowl)
- Open Pesto jar and spoon 2 TBSP into one bowl, stir to combine.
- Spoon 2 TBSP of bbq sauce into the other bowl, stir to combine.
- Store each prepared chicken in airtight containers and serve as desire.
How to serve chicken:
Easiest weeknight meal right here! And I love offering my family a choice. I’m team pesto but my husband is team BBQ. Our kids can choose one or a little bit of both. What a great way to get them exposed to pesto or meat mixed in sauce!
You can serve it for lunch, dinner or even a tasty protein-filled snack. For example:
- sandwiches/wraps (this is my go-to!)
- tacos
- salads
- with crackers
Basically, just pair with carb (easy corn casserole!) and veggie side dish and you also have a complete meal!
Tips and Tricks
- you can adjust the amount of sauce to taste
- you can toss in other ingredients to (Beans, Veggies, cheese, etc)
- This is good in fridge for 3-4 days
- Worried about chicken drying out? Don’t! Adding in sauce helps keep it moist!
- Mix right into these dishes and cover with lid–easy!
You could also spoon in one of these sauces to leftover shredded chicken (say you made a ton for another recipe). Or perhaps you have a lone chicken breast in the fridge– shred it up, stir in sauce and enjoy a delicious meal!
Is this healthy?
You bet it is! If you recall, shredded chicken offers so much nutrition in addition to lean protein– ie. vitamins, amino acids, and collagen to name a few!
Now you’re adding in simple sauces. And even with jars and bottles, there are many choices that can ensure you can tailor this recipe to your needs (ie. gluten free, dairy free, etc.).
Quick and easy is always healthy in my eyes and bonus when the whole family loves it too!
