I have serious love for corn casserole. Especially made with the little blue and white box used in this recipe.
I think of it sitting on my grandma’s kitchen countertop while she prepared a family style meal. And I see my mom reaching into the pantry for a box to bake up on holidays, as well as summer dinners.
Corn casserole serves up more than just a tasty side dish. And I love making those memories for my family!
Easy Corn Casserole
This Easy Corn Casserole is light, sweet and delicious! I’m using that favorite box of Jiffy Cornbread Mix (which is super inexpensive) and mixing with 5 other simple ingredients you likely have on hand. Several of those on your pantry shelf!
The star here is Greek yogurt which replaces messy melted butter. Not only does it add healthier benefits, it creates an irresistible light fluffy texture.
Whether you know variations of this recipe by the name of cornbread casserole or just corn casserole this easy combination is sure to be a family favorite!
What Ingredients do I need?
6 simple ingredients come together:
- 1 box of Jiffy corn muffin mix (spotted as low as 45 cents this week!)
- 3/4 cup of Greek Yogurt (can use a single serve 5.3 0z carton as well)
- 1 can of creamed corn
- 1 can of whole corn, drained
- 1 egg
- handful of crumbled/chopped spinach leaves
How do I make this recipe?
3 easy steps are all that is required here:
- Throw all ingredients, except spinach, together in bowl and mix
- Once combined, fold in the spinach
- Transfer to greased baking dish (9×9) and bake for about 45 minutes
Tips/Tricks
- Variations exist and you can add cheese, butter or a little honey or something spicy (jalapenos)
- Swap spinach for bell pepper or green onion
- Freeze your fresh spinach leaves so all you have to do is crumble it in ๐
- Store covered in fridge for 4-5 days
How can I serve this?
Anytime, anyway! Spoon it out, cut it more into squares. We love it all seasons:
Fall: serve with your chili or sloppy Joes
Winter: bake a pan with your soups and meatloaf
Spring: a wonderful addition to Taco bars and with Easter ham
Summertime: light enough for your grilled meats and hot dogs
Is this healthy?
Eliminating the butter is one of my favorite things to do. Greek yogurt not only offers more nutrition (and protein!) but creates a light and fluffy texture. The added spinach is subtle but a great way for my kids to get added nutrition.
And did you know corn can improve your digestion? Definitely an added benefit around the holidays as we enjoy our favorite foods!

- 9×9 baking dish
Ingredients
- 1 box Jiffy Corn muffin mix
- 1 carton plain Greek yogurt or 3/4 cup
- 1 can creamed corn
- 1 can whole corn drained
- 1 cup spinach crumbled or chopped
- 1 Egg
- salt and pepper optional
Instructions
- Start by gathering all ingredients
- Preheat oven to 350 degrees and spray baking dish with nonstick spray
- Mix all ingredients, except spinach, in bowl until well blended
- Add in spinach and fold in evenly
- Pour batter into baking dish and bake for 45-55 minutes, or until top is lightly browned and toothpick comes out nearly clean
