Looking to make frozen veggies more interesting? Let’s roast them! Toss in some oil, everything seasoning and turn on the oven. Frozen roasted vegetables transform into a tasty, healthy and affordable side dish. Also, a great addition to any sheet pan meal.
Frozen Veggies
I always stock up on bags of frozen veggies– such a simple way to add in some color and nutrition to any meal.
And as much as I love the convenience of steamer bags…
microwaved veggies are bland.
There I said it.
But we can change that. Go ahead– preheat the oven!
Frozen Roasted Veggies
Did you know you can roast frozen veggies?
They brown, sizzle, and skip the soggy for
Savory.
Simply open a bag of frozen veggies, toss in some oil and add some more interest with Everything seasoning. Your family might just start asking for frozen veggies!
Why you’ll love this recipe:
- Long shelf life
- Don’t have to worry about wasting fresh veggies
- Affordable– grab a bag for $1!
- Fast– no washing and no chopping!
- Nutritious– frozen veggies are just as healthy as fresh
- Seasoning is fun (per the words of my toddler)
Ingredients
Three ingredients are all you need!
- bag of mixed frozen vegetables
- 2 TBSP olive oil
- 1.5 Tablespoon of Everything Bagel Seasoning
Equipment
- Sheet pan
- parchment paper (optional)
- Spoon/Spatula
How to make Yummy, Crispy Veggies
- Preheat Oven to 425 degrees
- Line pan with parchment paper (optional)
- Open bag and add olive oil and seasoning, toss and mix until well coated
- Place veggies on pan in single layer
- Roast for 25-30 minutes, stirring halfway through
Tips/Tricks
- If veggies are stuck together or clumped in bag, be sure to separate them before coating in oil and placing in oven.
- Spoon out any oil/seasoning that sticks inside bag and drizzle onto veggies
- Want deeper browned roasted veggies? consider skipping the parchment paper
- Does warming the pan while pre-heating the oven create a better product? In my experience, no. But for some reason, it did help sound my smoke alarms 😉
- Want more color? Toss in frozen corn or other favorite veggies
Do you need to defrost veggies before roasting?
Nope! Just like my cauliflower gnocchi, it actually browns up best at a high temperature in oven straight from frozen.
Where can I buy Everything Bagel Seasoning?
The best seasoning for frozen roasted veggies is Everything seasoning, IMO. This scrumptious mixture of sesame seeds, poppy seeds, dried garlic & onion, and sea salt flakes is available at:
- Aldi — the one used in this recipe
- Trader Joe’s
- Amazon– there’s different brands but here’s an organic blend and very popular EBTB
I also really love Mrs. Dash, which is a salt-free option!
How long do I roast for?
On average, 30 minutes. But this could vary based on:
- size of veggies— larger ones may take longer (and you can always cut when stirring)
- how much “roast” you prefer
- quantity— if you grab a Costco size and you may need to roast longer
Stir halfway through and that will help guide your cook time!
Serving Ideas
Stumped for a side dish? Roast frozen veggies!
I love them with pasta and my easy marinara sauce. Also, a great addition to healthier sloppy joes or any kind of handheld (shredded chicken sandwich, hot dog, etc).
These are also a great addition to any sheet pan meal. Toss on a protein and voila!
And here’s an idea: If you already have the oven on (say while making sausage pancake muffins) throw a pan of veggies in after and have two options already prepped for the week!
While reheating this dish may not be quite as crispy, the flavor is phenomenal!
So there you have it. A $1.00, easy, and appealing way to eat frozen veggies. Of course you can add any seasoning you like, but who can refuse Everything Bagel Seasoning?!
