Ingredients
  

  • 1 box Jiffy Corn muffin mix
  • 1 carton plain Greek yogurt or 3/4 cup
  • 1 can creamed corn
  • 1 can whole corn drained
  • 1 cup spinach crumbled or chopped
  • 1 Egg
  • salt and pepper optional

Instructions
 

  • Start by gathering all ingredients
  • Preheat oven to 350 degrees and spray baking dish with nonstick spray
  • Mix all ingredients, except spinach, in bowl until well blended
  • Add in spinach and fold in evenly
  • Pour batter into baking dish and bake for 45-55 minutes, or until top is lightly browned and toothpick comes out nearly clean

Notes

If using a different size dish,  baking time will vary and casserole is done when center sets
