Bacon Spinach Egg Bake Recipe
As a new mom of two, this was definitely on repeat. I could swirl around my kitchen during witching hour and still feel like I put together one heck of a meal. In fact, this recipe stands out for a reason– convenient ingredients, easy to prep, and also a healthier dish.
You already learned my love for canned biscuits in my French Toast Bake. Here, they are again, baked into egg with savory bacon, gooey cheese and sprinkled with spinach.
What is an Egg Bake?
An Egg bake is an homestyle casserole that incorporates egg, cheese, meat, and a starch like bread or hash brown potatoes. There’s a ton of variations and it seems like you can pretty much throw in whatever you want and bake it up.
Call me biased, but mine is my favorite based on taste and ease!

What ingredients do I need?
- Canned biscuits— I told you about all the great benefits for keeping a can on hand here. They’re quick and easy and bubble up PERFECTLY every time.
- Eggs— great way to get key nutrition (protein, fat, vitamins). Even if you’re not an egg fan, give it a try. My daughter who would throw eggs across the room will shovel this in by the fist full.
- Bacon bits– Gives the taste of bacon without the work and grease. Bonus– Shelf stable prior to opening, easy to store and tastes marvelous . Look for packages that say “real bacon bits.”
- Non fat Milk– Always my go-to when scrambling eggs for rich, creamy nutrition.
- Spinach— Fresh spinach leaves. Or even easier, frozen fresh spinach. Stick around here and you’ll learn to keep your fresh leaves in the freezer so all you have to do is crumble them in.
- Cheddar Cheese– Shredded cheddar cheese makes this extra delicious.
- Garlic powder-The combination of bacon bits with garlic powder and spinach is ah-mazing
- Salt and Pepper-Sprinkle in to taste for extra flavor but totally optional.
How do I make Bacon, Spinach, Egg Bake?
It’s as simple as opening a can of biscuits, sprinkling in flavor and pouring on tasty egg mixture. So easy that this is ideal for holidays like Christmas morning. Spend 10 minutes prepping and the rest of the time playing on floor as a family.
Instructions
You can’t mess this up. Trust me, I have and still delish 😉 But please follow these instructions below!
1. Preheat oven to 350 degrees and lightly grease 9×13 baking dish
2. Cut each biscuit into 1/8th pieces, line pieces equally in dish. Sprinkle bacon, spinach and cheese on top of biscuit pieces
4. Scramble egg and milk together, stir in garlic powder, salt and pepper
5. Pour egg mixture on top of biscuits
6. Place dish into oven and bake for approximately 35 minutes, or until biscuits are golden brown and fork comes out clean
Pro Tips
- Substitute meat crumbles (or meat substitute!) or diced ham for bacon bits
- Any flavor of cheese works (though cheddars pairs well with eggs and bacon)
- Best to make bake this right before serving
- Adjust any of the ingredients (less spinach, more bacon or cheese) to your liking
- Pair with a slice of melon or assorted fruit for an even better plate

Cover dish with plastic wrap or place leftovers in airtight container and store in fridge for 3-4 days.
How do I reheat this Egg Bake?
Place a slice on a microwave dish and reheat for 1-2 minutes, or until warm.
