Looking for a way to eat more veggies without realizing it? The answer is in your freezer. Here’s 4 super easy ways you can add frozen riced cauliflower to your plate right now.
Eating more vegetables seems to be at the top of most people’s list. And if you’re a mama, perhaps you struggle with trying to get more veggies in your kiddos.
Don’t stress.
Today I’m sharing the easiest food hack using frozen riced cauliflower.
No chopping, prepping. Just open your freezer and enjoy!
Cauliflower
Unless you’re eating my air fryer parmesan cauliflower gnocchi, you may not typically find yourself eating cauliflower. But there are so many benefits:
- High in Fiber
- Rich in antioxidant (including sulforaphane which can stop cancer growth)
- Good source of Choline–important for liver and nerve function and brain development
- Low calorie, high in vitamins
But steaming, roasting, sauteing is a bit boring.
And a bit stinky!
Frozen Riced Cauliflower
Say hello to frozen riced cauliflower! It’s all the nutrition of regular cauliflower but in the form of what most people would say resembles rice. Therefore, it’s a popular replacement for that and other legumes and grains.
But when I look at it, I can’t help to think of “sprinkles.”
And I don’t see it so much as a substitute. Rather, I like to think of it as an addition.
Benefits for Busy Moms
Frozen riced cauliflower is so versatile. And keeping it in the freezer has so many benefits:
- Always have on hand
- inexpensive
- long expiration date
- no prep (can hold fussy baby and still serve a veggie!)
- no clean up
- easily adapts into dishes (mild flavor)
- none of that cauliflower “aroma” you get in the microwave
Along with buying spinach for my spinach freezer hack, you’ll want to stock up on this cauliflower too!
Where to buy Frozen Riced Cauliflower
I buy it wherever I’m shopping– it seems to be available anywhere! Trader joe’s, Aldi, and Sprouts.
You’ll also find it at your local grocery store under the brand of Green Giant, or my favorite way to save– the store brand!
I’ve never bought it from Costco, but I remember seeing a big bag there one time. Buying in bulk would definitely be a smart way to go since you’ll be throwing it into so many things!
How do I use frozen riced cauliflower in recipe?
All you have to do is:
- Open freezer
- Grab a handful (or roughly 1/2 cup full)
- Add it to your recipe
That’s it! No defrosting or worrying about it being soggy. It’ll blend right in, and you’ll hardly (if even) know it’s there!
Tips/Tricks
- If bag has frozen clumps, break up by hitting back against counter
- Start off with a small amount and can gradually add more in or use more at subsequent meal
- Once bag is open, you rubber band or put inside freezer Ziploc bag to prevent freezer burn, which could add in extra moisture to dishes.
So, I’ll leave you with my favorite ways to use this veggie. I hope it inspires you to add in a little extra good today!
4 ways to use frozen riced cauliflower right now
1. Taco Meat
When you think of the texture of ground beef, perhaps you can think imagine how little bits of riced cauliflower can fit right in. And it sure does! I like to sprinkle in right as the meat is finishing cooking and let it simmer with the seasoning.
This could also work as an option in my healthier sloppy joes or one dish cheeseburger skillet!
2. Frozen Pizza
Perhaps the words cauliflower and pizza make you think of crust. Not here! We are sprinkling that cauliflower right onto the pizza as a topping. Include your other favorite toppings, including cheese and bake as directed on box.
Please note, when adding additional toppings, extra time may be required to cook thoroughly.
3. Scrambled eggs
The texture of scrambled eggs is a great place to add in riced cauliflower.
When the eggs are about halfway done cooking, toss in cauliflower and continue to cook/scramble as you normally would.
You may also consider additional flavor in the eggs such as bacon bits or seasoning.
4. Smoothie
No need to cook it before, riced cauliflower is perfectly safe to put right into the blender with your favorite smoothie recipe. It gives a creamy texture and blends right in without any awkward chunks or hints of veggie.
