In this house we actually call them “pay pays.” When my son was two, he’d get so excited in the morning and request “pay pays” for breakfast.
And lemme tell ya, they are still in high demand today!
If you’re like me and wanting the ease of frozen “pay pays” but with the benefit of a hearty breakfast, this recipe is a great solution.
Pancake Mix Muffins
This recipe transforms your pancake mix into perfectly portioned, great for little hands and on-the- go sized muffins.
It also beats standing at the stove, flipping one by one.
With only 5 ingredients and a couple stirs, you can have a scrumptious, protein packed breakfast for the week.
These make a wonderful snack too!
What Ingredients do I need?
Way easier than pancake muffins from scratch!
- Aunt Maple’s Protein Oat Pancake Mix— I’m using my favorite pancake mix that not only contains protein but also OATS. Can you believe that?! It’s a great find at ALDI and perks up even more when mixed with the other ingredients.
- Milk— nonfat milk is my go-to when mixing pancakes. You could also use water or half milk and half water.
- Pre-cooked Turkey Sausage— I use a package of pre-cooked turkey sausage links or patties, but any meat would work. Slicing into small pieces ensures they’re easy to eat and evenly distributed.
- Vanilla— a simple sweet; you could also use syrup to sweeten the batter as well
- Cinnamon— the hint of cinnamon nestled up against the sausage is delightful in the morning.
What Substitutions work here?
- Pancake mix— I like Aunt Maple’s for price and to sneak in those extra oats, but feel free to use whatever you have sitting in your pantry (Bisquick, buttermilk, etc.) I’m sure you could also toss in some oats if you felt so inclined!
- Milk— I suggest milk but you can also use water or half water, half milk!
- Sausage— my go-to is turkey sausage but you can substitute whatever here. This is a great recipe to use the meat crumbles I suggest in my no prep lasagna too!!
What equipment do I need?
Skip the griddle and the spatula, all you need is a muffin tin/pan for this recipe.
Fun fact– In the past I’ve mixed a variation of this recipe up using a different pan. But I must say, this muffin pan has changed the way I pancake muffin in the morning. I barely have to clean it., it basically wipes clean!
And compared to scrubbing the last, no matter how much spray I used, that is a huge bonus!
How do I make Pancake Mix Muffins?
This is an easy recipe and one my kids like to help with. Together we:
- Preheat oven
- Spray muffin pan with non-stick spray (yes, even silicone!)
- Cut up sausage into pieces and set aside
- Combine pancake mix, milk, vanilla and cinnamon in bowl
- Pour prepared batter evenly into muffin tins
- Add sausage pieces
- Bake for about 15- 20 minutes, or until cooked through
Tips/Tricks:
- Don’t over stir the batter (that can make for a more dense cake)
- batter will be lumpy (there’s oats in here!)
- Use silicone muffin tin for easy out and clean
- Use your favorite pancake mix
- NOTE: for tiny tummies (ages 2 and under) consider regular pancake mix or mix half protein pancake mix with half regular to make for easy digestion.
- Did you know you can freeze pancake batter for 2-3 months? You could double this recipe, bake one and toss half of batter into an airtight container/freezer bag for future use!
Can I save these pancakes?
Yes! Make ahead and store in an airtight container in fridge for 5 days.
I know some people premix pancake batter and keep that in the fridge to save time. But why not make these muffins and keep them in the fridge instead?! Total time saver!
I’ve never frozen them because we devour for breakfast and snacks. But I’m sure you could!
How do I reheat these?
Place on microwave safe plate and reheat for 15-30 seconds per muffin. You can also eat cold ๐
What should I serve these with?
These pair very well with a little cup of syrup or honey to dip.
Other than that, serve with some fruit if possible, and you’ve got a great breakfast!
And for a fun lunch idea, consider tossing one of these in the lunchbox. I find these little containers so handy for syrup (among other things!) so my kids can enjoy their favorites.
Are these healthy?
Protein, Oats, and turkey sausage, oh my! These are healthy!
Here you get the handheld muffin you love but by using pancake mix instead of muffin mix you get:
- Less sugar
- Less fat
- And less ingredients (no baking powder, no egg, etc.)
Added benefit: This is a healthier option for my husband who loves those breakfast corn dogs aka pancake and sausage on a stick ๐

Sausage Pancake Muffins
Equipment
- oven
Ingredients
- 2 cups Pancake mix I use Aunt Maple's Protein Oat
- 2 cups non fat milk can also use water or combo of milk and water
- 6-8 links pre-cooked sausage turkey
- 2 tsp vanilla
- 1 tsp cinnamon
Instructions
- Preheat oven to 350 degrees and spray pan with non-stick cooking spray
- Chop sausage into small pieces, set aside
- In a bowl, combine pancake mix, milk, vanilla and cinnamon and mix (do not over mix)
- Pour batter evenly into 12 muffin cups
- Sprinkle/Press sausage pieces into and on top of batter
- Bake for approximately 20 minutes, or until cooked through
- Serve with syrup and/or fruit and enjoy!
