Sausage Pancake Muffins

Pour your pancake batter right into a muffin tin! These 5- ingredient Sausage Pancake Muffins contain delicious sausage and oats and are perked up with a bit of vanilla and a cinnamon to make a satisfying start to your day.

Equipment

Ingredients
  

  • 2 cups Pancake mix I use Aunt Maple's Protein Oat
  • 2 cups non fat milk can also use water or combo of milk and water
  • 6-8 links pre-cooked sausage turkey
  • 2 tsp vanilla
  • 1 tsp cinnamon

Instructions
 

  • Preheat oven to 350 degrees and spray pan with non-stick cooking spray
  • Chop sausage into small pieces, set aside
  • In a bowl, combine pancake mix, milk, vanilla and cinnamon and mix (do not over mix)
  • Pour batter evenly into 12 muffin cups
  • Sprinkle/Press sausage pieces into and on top of batter
  • Bake for approximately 20 minutes, or until cooked through
  • Serve with syrup and/or fruit and enjoy!

Notes

This is a thicker batter. You can add additional liquid to thin out a bit more if you prefer
