Sausage Pancake Muffins

Pancake mix
I use Aunt Maple's Protein Oat
2
cups
non fat milk
can also use water or combo of milk and water

pre-cooked sausage
turkey

tsp
vanilla

tsp
cinnamon
Instructions
Preheat oven to 350 degrees and spray pan with non-stick cooking spray
Chop sausage into small pieces, set aside
In a bowl, combine pancake mix, milk, vanilla and cinnamon and mix (do not over mix)
Pour batter evenly into 12 muffin cups
Sprinkle/Press sausage pieces into and on top of batter
Bake for approximately 20 minutes, or until cooked through
Serve with syrup and/or fruit and enjoy!
Notes
This is a thicker batter. You can add additional liquid to thin out a bit more if you prefer
