Caprese Pasta Salad

Caprese Pasta Salad uses only 5 ingredients--pasta, tomatoes, mozzarella, basil and prepared salad dressing. Easy to prepare and perfect throughout the week for mouthwatering lunches and dinners.

Ingredients
  

  • 8 oz Whole grain rotini pasta
  • 1 pint cherry or grape tomatoes
  • 8 ounces mozzarella pearls
  • 1/4 cup fresh basil several sprigs
  • 3/4 cup Italian Dressing lite
  • salt and pepper to taste and optional

Instructions
 

  • Boil and cook pasta until al dente, following package instructions. Drain and set aside
  • While pasta is cooking, slice tomatoes in half, chop basil and open package of mozzarella pearls, separating if needed.
  • Once pasta is cool, combine with tomatoes, basil, mozzarella. Pour dressing over and toss to combine. Refrigerate if not serving immediately.

Notes

Lightly drizzle cooked noodles with olive oil while cooling to prevent from sticking
