Stuffing Muffins

Thanksgiving right in the palm of your hand! Your favorite boxed stuffing mix transforms into a lightly crisped muffin packed with protein filled chicken, crisp celery and sweet cranberries. Fun to stir up with the kids for lunchboxes and snacks!

Ingredients
  

  • 1 box stuffing mix 6 oz, chicken flavored
  • 1 1/2 cup water
  • 1/4 cup butter melted
  • 12.5 oz canned chicken
  • 2 stalks celery chopped
  • 1/3 cup dried cranberries and a few extra to place on top

Instructions
 

  • Heat oven to 350 degrees and spray pan with nonstick spray
  • Toss stuffing mix with melted butter and water in large bowl
  • Add celery and cranberries, mix well. Fold in chicken until combined
  • Pile stuffing mixture evenly into 12 muffin tins
  • Using back of spoon, press mixture into cups
  • Bake for 20-25 minutes, until golden brown and tops lightly crispy
  • Enjoy!

Notes

Replace chicken with thanksgiving turkey and create a fun way to enjoy leftovers!
