  • 1 can pineapple chunks, diced
  • 1 cup bell pepper chopped
  • 1/2 cup tomatoes chopped
  • 1/3 cup red onion chopped
  • 1/3 cup fresh spinach chopped
  • 2 tsp dried cilantro
  • 1 tsp garlic powder
  • 1/4 tsp ginger powder optional
  • 2 TBSP Lemon or Lime juice
  • salt and pepper to taste

Instructions
 

  • Mix all ingredients in a large bowl.
  • Serve immediately or chill until ready to serve

Notes

For optimal color, choose 2 colors of bell pepper, using 1/2 cup of each
