Chips and Queso
Oh Chippies. How we love you and queso. I say “we” because my husband and I literally fall in love all over again while sharing chips and dip. Whether we’re on a date, on a layover in an airport or just needing a Sunday afternoon snack, we default to chips and dip.
I’m actually very particular about the way I dip. The perfect combination is achieved by dipping a chip into queso (preferably white cheese) and allowing the excess to drip off. Then, it’s dipped it into salsa.
Oh, my mouth is watering just thinking of it.
Since the craving is strong, I’ve always been on a hunt for a healthier way to queso. If you know me, you’re likely familiar with my laughing cow cheese hack. While that’s a great way to get the taste of chips and cheese, it left me wanting more.
More of that creamy, warm drip-off- your- chip- type dip that I so love to create at a Mexican restaurant.
Enter this Easy Queso recipe.
Easy Queso
Combining my cravings with my favorite combo, I’ve created a healthier way to dip. When greek yogurt and salsa meet, they mesh together and “melt” much like a queso. Sprinking a small amount of cheese creates that touch of ooo-gooey goodness but in a much lighter way.

Ingredients
You only need 3 ingredients for this dip:
- Greek Yogurt– I use nonfat Greek yogurt and buy a big carton of it at Aldi.
- Salsa— any works here but my go-to is just a simple, mild salsa. It provides the seasoning and texture of a great dip.
- Shredded Cheese— I typically use cheddar, but any would work!
How do I make this?
- Grab a bowl and spoon Greek yogurt and salsa in it
- Mix until well combined
- Microwave until “melted” and “bubbling” hot
- Sprinkle Cheese on top
- Grab a chip and dip right in
Tips/Tricks
- You can adjust amount of ingredients to your preference
- You can get creative and add in anything–additional spices, meat, veggies, etc.
- I haven’t tried any of these variations but I’m thinking sour cream, plain yogurt, cottage cheese would also work to form a creamy, thick dip.
- You may find spraying the bowl with a nonstick spray is helpful for clean up
- Caution: Bowl may be hot when removing from microwave
- Stock up on these glass Pyrex dishes— you’ll have any size you need and can cook, store, reheat and serve in the same bowl!
How do I serve this?
Obviously, dipping with chips is my favorite, but this is great with really anything! Here are some ideas:
- Carrots
- Bell Peppers
- Whole grain crackers
- Baked tortillas
- Pita Chips
You could also prepare this and top it on top of:
- Tacos
- Salads
- Chicken
Is this healthy?
So to answer this health question, I think we need to talk about what is usually in queso. Typically, queso is made of cheese, milk, cream, butter and a punch full of flavor from spices, tomatoes, jalapeños, etc.
These are great things but aren’t the best to consume frequently.
Here, you’re getting a ton of protein (one serving has 10 grams of protein!), little fat and the refreshing blend of salsa.
And it’s deliciously easy. That is healthy, my friends!!

- microwave
Ingredients
- 2/3 cup Greek Yogurt Plain, nonfat
- 2/3 cup Salsa mild
- 2 tbsp shredded cheese
Instructions
- Gather ingredients
- Spoon Greek Yogurt and Salsa into bowl and stir until well blended
- Heat in microwave for 2-3 minutes until "melted" and warm, stirring every 30-45 seconds
- Sprinkle cheese on top and enjoy!
